Zucchini Cake

For the holidays or any occasion, try poking holes in the cake and pouring rum over it. What a flavorful cake.
 

Ingredients

  • 6 eggs
  • 2 cups oil
  • 2 cups sugar
  • 2 cups brown sugar
  • 4 cups zucchini
  • 4 cups flour
  • 2 tsp salt
  • 4 tsp baking soda
  • 2 tsp baking powder
  • 3 tbsp cinnamon
  • 2 tbsp vanilla
  • Nuts, optional

Method

Mix first 5 ingredients together, add the next 5, and when well blended, add vanilla and nuts. Bake at 325 degrees in a glass pan for 1 1/2 hours, or in an aluminum pan for 45-60 minutes.
