Turn your fruitcake into something wonderful. Just dip these fruitcake balls in white chocolate and roll in nuts and dried cranberries
Place chopped fruitcake, orange juice, and cream cheese into bowl of food processor. Process until ingredients combine to form a ball. Cover and chill for at least one hour. Line a large baking sheet with parchment paper. Take two teaspoons of dough and form into a ball, place on baking sheet. Repeat process until all mixture is used. Place baking sheet into refrigerator. Combine pistachios and cranberries into a small shallow bowl. Slowly melt white chocolate in bowl over double boiler, stirring frequently. Once melted, remove from heat and stir until smooth. One at a time, place fruitcake bite into the melted chocolate. Using a fork, turn fruitcake bite to evenly coat with chocolate. With fruitcake bite on fork, draw fork across rim of bowl to remove any excess chocolate. Immediately, roll dipped fruitcake bite in the pistachio and cranberry mixture, then place back on parchment lined baking sheet. Repeat process until all bites are dipped and rolled.
Keep fruitcake bites chilled until ready to serve.

This is a delicious and creative way I use up the fruitcake(s) that I receive every Christmas. I always get wonderful comments on them, especially from folks that don't normally fancy fruitcake.
