Sweet Potatoes and Pineapple

Top a mashed sweet potato, pineapple and brown sugar mixture with a spiced orange buttery crust for an easy holiday side dish.
Ingredients
- 3 or 4 sweet potatoes
- 1 (8 oz.) can crushed pineapple, drained
- 1/2 cup packed brown sugar
- 1/4 cup whipping cream
- 1 tsp vanilla
- 2 eggs, beaten
- 1/4 tsp salt
- 3 tbsp. all-purpose flour
- 2 tbsp butter
- 1/4 tsp ground cinnamon
- 2 tbsp grated orange peel, and juice of one orange (about 1/3 cup)
- 1/2 cup finely chopped pecans

Preheat oven to 350 degrees. Butter a 13x9-inch baking dish. Peel potatoes and cut into 1-inch pieces. Cook in boiling water for 30 minutes until tender. Drain and mash potatoes. Add the drained pineapple, 1/4 cup of the brown sugar, whipping cream, vanilla, eggs, and salt; stir. Put mixture into the buttered baking dish. CRUST: In a separate saucepan combine remaining brown sugar, flour, butter, cinnamon, grated orange peel and the juice of one orange, and chopped pecans. Cook until mixture is melted. Pour over the potato mixture. Bake, uncovered, at 350 degrees for 20 minutes.
