Sweet Potato Bake

Sweet potatoes are a must for holiday meals or just a family dinner--this recipe makes them extra special with a crunchy streusel topping.
Ingredients
- Potatoes:
- 2 lbs sweet potatoes
- 3/4 cup granulated sugar
- 1/4 cup evaporated low fat milk
- 3 tablespoons melted butter
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- 1/8 tsp cinnamon
- 1 1/2 teaspoon real vanilla extract
- 2 large eggs
- Topping:
- 1/3 cup all purpose flour
- 2/3 cup packed brown sugar
- 1/8 teaspoon salt
- 2 tablespoons melted butter
- 1/4 cup chopped pecans or walnuts

Preheat oven to 350 degrees. Peel and chop sweet potatoes to medium dice, place in a 2 qt pot, and cover with water. Bring water to a boil, reduce heat, and simmer 15-20 minutes or until potatoes are tender. Drain potatoes and let cool 5 minutes. Place sweet potatoes in a large bowl. Add granulated sugar, evaporated milk, melted butter, salt, nutmeg, cinnamon, and vanilla. Beat with a mixer on medium until smooth. Add eggs and continue to mix until eggs are incorporated. Pour potato mixture into a 2 1/2 quart baking dish coated with cooking spray. To prepare topping, mix flour, brown sugar, and salt then whisk ingredients together. Melt butter and stir in. Sprinkle flour mixture over potatoes and uniformly arrange pecans over top. Bake 25 minutes or just until golden. To finish the top, remove baking dish from oven and heat under a broiler. Place baking dish under broiler for 45 seconds, or until bubbly. Let stand 8-10 minutes before serving.
