Sugar Plums

This tasty and festive treat is perfect for the holidays. What a great name, Sugar Plums.
 

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs, well beaten
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 1 tablespoon baking soda
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups old fashioned oatmeal
  • 1 cup shredded coconut
  • 1 pound small gum drops, cut in small pieces
  • Colored sugar

Method

In an electric mixer, cream butter and both sugars, then add eggs. In a separate bowl, mix together flour, soda, powder and salt. Add to creamed mixture and mix well. Add oatmeal and coconut until well blended. Stir in gumdrops. Form into 2 1/2 inch balls. Dip in colored sugar. Place on a parchment lined cookie sheet about 2 inches apart. Using a fork that has been dipped in colored sugar, press down on top of cookie, once in each direction. Bake 12 minutes at 350 degrees. Remove to cookie rack to cool.
