
This pretty red layered dessert is perfect at holiday time. Ice cream with vanilla wafers and raspberries for a festive dessert.
1. Combine gelatin and juice in small saucepan. Cook over moderate heat until mixture comes to a boil and starts to thicken.
2. Beat ice cream on slow speed in large mixer bowl. Add raspberry syrup gradually, while continuing to beat.
3. Spoon 1/4 of the ice cream mixture into a 9-inch round souffle dish. Top with 12 of the wafers. Cover with another 1/4 of the ice cream mixture plus 1/4 of the fresh raspberries. Repeat wafer/ice cream and berries layers twice more.
Chill.
4. Serve in dessert dishes, garnished with remaining raspberries and fresh mint leaves.
Notes:
This makes an especially nice Christmas Day dessert since it is lighter than the traditional pies and puddings.
