Raspberry Bars


The crust and topper for these bars contains brown sugar, butter, flour and rolled oats, with a filling of seedless raspberry preserves that is spread in the middle.



Ingredients:

  • 1/2 cup packed brown sugar
  • 1/2 cup flour + 2 TBSP
  • 1/2 teaspoon baking soda
  • 1/2 cup old-fashioned rolled oats
  • 6 TBSP softened butter
  • 2 TBSP water
  • 1/2 jar seedless red raspberry preserves (about 6 ounces)

Method

Preheat oven to 400F. In a large mixing bowl, add brown sugar, flour, oats, and baking soda. Stir until all ingredients are evenly distributed throughout the mixture. With a fork, cut butter into this mixture. Continue to incorporate the butter until it is evenly distributed throughout. Remove 1/2 cup of the mixture and set it aside. To the remaining mixture, add the water and stir until well mixed. Place this mixture into a 8x8 or 9x9" baking pan; firmly pat down to make a crust. Now spread the preserves evenly over the crust. Sprinkle the remaining flour mixture evenly over the preserves. Gently pat the crumbs down into the preserves. Bake for 20 minutes or until the top starts to lightly brown. Remove from the oven and cool. Cut into bars and serve.

Number of servings: 12-15 bars
