No-Bake Peanut Butter Rocky Road Bar Cookies

These easy-to-make treats combine melted chocolate pieces, peanut butter, broken vanilla wafers and tiny marshmallows, pressed into a pan and chilled.
 

Ingredients

  • 12-oz bag semisweet chocolate chips
  • 1/2 cup smooth peanut butter
  • 2 tbsp (unsalted) butter
  • 1 tsp vanilla extract
  • 1 1/2 cups broken vanilla wafers (in big and small pieces)
  • 1 1/2 cups mini-marshmallows

Method

Line an 8x8-inch baking dish or pan with foil and spray with nonstick spray; set aside. Using a 3-qt. nonstick saucepan, melt chocolate over very low heat, stirring constantly. Add peanut butter, butter and vanilla extract; heat and stir until smooth. Add wafers and marshmallows to pan and fold in. Drop onto prepared baking dish and smooth surface. Cover with plastic wrap or foil and refrigerate until set, about 4 hours. Cut into 16 squares.

 

Notes: These are super easy, super delicious and hard to resist. I've been making some varitation of this cookie for years. Feel free to substitute your favorite add-ins.
