Lebanese Christmas Cookies

These shaped cookies contain chopped dates, pistachios, cloves and allspice, and are drizzled after baking with honey and pomegranate molasses.
Ingredients
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pitted dates, chopped
- 1/2 cup shelled pistachio nuts, chopped
- 2 tablespoons honey
- 1 tablespoon pomegranate molasses
- 2-3 teaspoons milk

Method
In a large bowl mix flour, cloves, allspice and salt. In another large bowl, beat butter and sugar with an electric mixer until light and fluffy. Beat in egg and vanilla. Reduce mixer speed to low and gradually add flour mixture, beating until well blended. Stir in dates and pistachios. Cover and chill dough for one hour. Heat oven to 350 degrees. Lightly grease cookie sheets. Shape tablespoons of dough into balls and place 2 inches apart on cookie sheets. Bake cookies 11-13 minutes or until edges are set and light golden brown. Cool 1 minute then remove from cookie sheets and place on wire racks to cool for 10 minutes. In a small bowl, blend honey and pomegranate molasses; add just enough milk for a drizzling consistency. Drizzle glaze over cookies.
