Kelly's Mint Chocolate Chip Cookies

Semisweet, white chocolate, and mint chips, plus nuts, are added to chocolate cookie dough to make these jumbo holiday cookies.
Ingredients
- 2 cups butter, at room temperature
- 3/4 cup granulated sugar
- 1 1/2 cups packed brown sugar
- 4 eggs
- 1 tbsp vanilla
- 4 cups all-purpose flour
- 1/2 cup dry cocoa powder
- 1/2 tsp salt
- 1 12 oz bag semisweet chocolate chips
- 1 12 oz bag white chocolate chips
- 1 12 oz bag peppermint or mint chips
- 2 cups walnuts or pecans, optional

Preheat oven to 375 degrees. By hand, using a wooden spoon, mix butter and sugars in a large bowl. Add eggs, one at a time, and vanilla. Combine and add flour, cocoa powder and salt. Fold in all chips and the nuts until well combined. Drop by 1/4 cup portions onto an ungreased cookie sheet, flatten slightly, and bake for 11-13 minutes, or until golden brown.
Notes: My sister started making a version of these cookies when she was in college and would deliver them to her father-in-law on weekends. They were so popular, she made 200 of them for her wedding. They are a chocolate lover's dream. She says the secret to these cookies is to mix them by hand with a wooden spoon, in order to produce a dense fudgy cookie. In keeping with the holiday spirit, I add some peppermint chips.
