Holiday Turkey Stuffing

A savory bread stuffing with pepper, onions and sausage.
 

Ingredients

  • 1-2 tbsp olive oil
  • 1 large onion, chopped
  • 1 small sweet red pepper: cored, seeded and finely chopped
  • 1 small sweet green pepper: cored, seeded and finely chopped
  • 2 stalks celery, chopped
  • 1/4 pound baby raw carrots minced
  • 3 cloves garlic, minced
  • 12 ounce breakfast sausage roll, broken into small chunks or 3/4 lb fresh ground sausage
  • 1 large box cubed stuffing mix
  • 2 cups chicken broth
  • 1 1/2 cups hot water

Method

Add 1 tbsp olive oil to a 12 inch cast iron fry pan, or nonstick skillet, on medium heat. Heat oil until almost smoking. Saute onion and sausage in oil until onions are translucent and sausage is almost cooked through. Add peppers, celery and carrots. Saute until no pink remains in sausage and vegetables are cooked. Add garlic and saute for 1 minute, being careful not to burn garlic. Remove pan from heat and set aside. In a large bowl, add stuffing. Pour chicken broth and water on top of stuffing. Mix lightly with a fork. Pour the vegetable and sausage mixture from frying pan on top of stuffing in bowl and lightly mix with a fork. If stuffing is too dry, add a little water, or broth, 1/4 cup at a time. Let stuffing cool for 15 minutes. Cover and refrigerate until ready to use. Do not put warm stuffing into turkey. Loosely fill cavity of turkey with stuffing. Remaining stuffing can be baked in a covered, ovenproof dish, for 30-40 minutes at 350 degrees.

 

Notes: This recipe makes enough to stuff a 20 plus pound turkey. To save time, the vegetables can be chopped and minced in a food processor.
