Harvard Beets


Heat canned beets in a thickened sweet and sour sauce for a quick and easy side dish.



Ingredients:

  • 3 Tbsp butter or margarine
  • 1/2 cup sugar
  • 1/4 cup water with 1 tbsp of cornstarch (stir to dissolve)
  • 1/4 cup vinegar
  • 1 can (16 oz.) sliced beets (drained)

Method

Melt butter or margarine in a saucepan; add sugar, cornstarch mixture, and vinegar. Cook and stir over medium heat until mixture begins to thicken. Add drained beets and continue to simmer until beets are completely warm. Pour into a serving bowl.

Notes: These are delicious. Even my grandchildren like them. And a very good choice to serve with your Christmas Dinner. Adds color to your table of feast and very good with other vegetables. Just double or triple the above recipe for each added can of beets - depends on how many you will be serving.
