Glazed Sliced Potatoes


A wonderful side dish of potatoes basted in a sweet and sour glaze.



Ingredients:

  • 1 1/2 pounds medium red potatoes, scrubbed and cut into 1/4 inch thick slices  
  • 1/2 cup firmly packed light brown sugar  
  • 1/4 cup water  
  • 3 tbsp butter  
  • 2 tbsp white vinegar  
  • 1 tsp ground ginger  
  • 1/2 tsp salt  
  • 1/8 tsp ground black pepper  

Method

Preheat oven to 400F. Spray 9 inch pie plate with cooking spray. Bring a large saucepan of water to a boil over high heat. Add potatoes. Cook for 5 minutes, drain. Arrange potatoes in the pie plate, overlapping slices. In a small saucepan, combine brown sugar, water, butter, vinegar, ginger, salt, and pepper. Mix well, cook mixture over medium heat until sugar dissolves, about 2 minutes. Pour sugar mixture evenly over potatoes, bake, basting occasionally, until potatoes are tender, about 20 minutes.
