Glazed Lime Cookies


The dough for these criss-cross cookies contains lime peel and juice. After baking, a lime-granulated sugar glaze--plus powdered sugar--go on top.



Ingredients:

  • 1/2 cup butter
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoon grated lime peel
  • 1/2 cup (fresh) lime juice
  • Glaze:
  • 2 cups granulated sugar
  • 3/4 cup lime juice
  • 2 cups powdered sugar

Method

Preheat oven to 350 degree. In a medium bowl, mix flour and baking powder; set aside. In a large bowl, beat butter and sugar until creamy. Add lime peel and the 1/2 cup juice. Mix well at low speed; add flour mixture and mix just until combined. Cover and chill dough about 30 minutes. Shape dough into 1-inch balls. Place cookies on baking sheet. Using a fork, press a crisscross pattern onto cookies. Bake until edges are lightly golden brown, about 10 minutes. Transfer cookies to a wire rack. Mix remaining lime juice and granulated sugar and stir about three minutes to dissolve sugar. Spoon lime glaze over each cookie. Sprinkle powdered sugar over top of each glazed cookie. Cool completely.

Notes: Please use butter in making these cookies. Fresh lime juice gives these cookies a good kick. If you use bottled lime juice it is ok.
