Fruited Coconut Snowballs


An easy no-bake candy with dried fruit, coconut, and sweetened condensed milk. Get the kids involved.



Ingredients:

  • 1/2 cup finely chopped dried apricots
  • 1/2 cup dried cranberries
  • 1 cup flaked coconut, plus additional for garnish
  • 1 teaspoon grated orange zest
  • 1/2 (14 ounce) can sweetened condensed milk
  • Confectioner's sugar

Method

Place apricots and cranberries in a small bowl and cover with boiling water. Let stand five minutes, then drain. In a large bowl, combine apricots, cranberries, coconut and orange zest. Add milk and mix well. Chill for 30 minutes. Knead in small amounts confectioner's sugar until mixture is firm enough to easily shape. Form mixture into 1 inch balls and roll in additional coconut. Cover and refrigerate at least 2 hours before serving. Store in refrigerator.

Notes: These candies are simple and delicious. I appreciate that this is a no bake recipe, because it leaves my oven free for making other holiday treats.
