Sweet potatoes add a natural sweetness to this creamy fall pastry.

2 lbs Sweet Potatoes, peeled and cubed
¼ cup Plain Yogurt
¾ cups Packed Dark Brown Sugar
½ tsp Cinnamon
¼ tsp Nutmeg
6 Egg Yolks
Salt, to taste
1 cup Chopped Roasted Pecans
2 Tbsp Maple Syrup
9-10" Cooked Pie Shell, uncooked


Preheat oven to 350 degrees. Boil sweet potatoes for 30 minutes. Puree cooked potatoes. Place potatoes in bowl and whisk in yogurt, sugar, cinnamon, nutmeg, egg yolks and salt. Pour mixture into the pie shell. Add maple syrup and top with pecans. Bake for 45-50 minutes.
