Ingredients:
| 2 lbs | Sweet Potatoes, peeled and cubed |
| ¼ cup | Plain Yogurt |
| ¾ cups | Packed Dark Brown Sugar |
| ½ tsp | Cinnamon |
| ¼ tsp | Nutmeg |
| 6 | Egg Yolks |
| Salt, to taste | |
| 1 cup | Chopped Roasted Pecans |
| 2 Tbsp | Maple Syrup |
| 9-10" Cooked Pie Shell, uncooked |
Directions:
Preheat oven to 350 degrees. Boil sweet potatoes for 30 minutes. Puree cooked potatoes. Place potatoes in bowl and whisk in yogurt, sugar, cinnamon, nutmeg, egg yolks and salt. Pour mixture into the pie shell. Add maple syrup and top with pecans. Bake for 45-50 minutes.
