Saltine crackers are spread with a cooked sugar-butter mixture, baked, broken, and topped with white chocolate, crushed candy & dark chocolate.
Preheat oven to 375 degrees. Line a 10x15x1-inch baking pan with parchment paper. Line with a single layer of crackers. Melt butter and sugars in a large, heavy-bottomed saucepan. Bring to a boil over medium-high heat, stirring constantly. Boil 5 minutes; remove from heat and stir in almonds.
Pour over crackers and spread gently with spatula, until well-covered. Bake for 8 minutes then remove from oven and sprinkle with white chocolate chips. Return to oven for 2 minutes more, or until chocolate is about half-melted. Spread chocolate evenly and sprinkle with crushed peppermint candy.
Chill and break into small pieces. Melt dark chocolate in small microwave safe bowl at 10 second intervals, until melted and smooth. Cool chocolate slightly, place in a small zip-top bag, snip a tiny corner from bag and drizzle zig-zags over the candy pieces. Chill again until ready to serve.
Notes:
Not a fan of peppermint? No problem, substitute dried cranberries.
