
Jellied cranberry sauce is added to a sugar syrup and boiled. Cornstarch is added to thicken and mint extract flavors the sauce. Spoon it over ham or lamb, or other meats as desired, during roasting.
In large saucepan, cook sugar and water over medium heat until it just begins to boil, stirring occasionally. Add jellied cranberry sauce and bring to full boil. Boil until mixture reaches 250 degrees (on a candy thermometer) AND the cranberry sauce is thoroughly incorporated into the sugar and water, stirring occasionally.
Carefully stir in cornstarch mixture; continue to boil for 1-2 minutes until mixture begins to thicken, stirring continually. Remove from heat; stir in mint extract; beat until any lumps are removed. Allow to cool and brush over meat course.
