
This recipe starts with packaged stuffing mix and adds caramelized onion, dried cranberries, celery and thyme. The stuffing is baked in a casserole.
Melt 3 tbsp. of the butter in a large saucepan over medium-high heat. Add onions and sugar. Cook and stir until onions brown slightly, about 5 minutes. Reduce heat to low, add the 1/4 cup water and cook, stirring often, until liquid has evaporated and onions are tender, about 10 minutes. Remove from pan. Melt remaining butter in same pan. Cook celery and thyme for 5 minutes. Remove from heat. Add onions, cranberries and stuffing mix and seasoning packet. Stir in the 2 cups hot water. Spoon into a 2 quart casserole. Cover & bake @ 350 degrees F for 40 minutes or until hot.
