Spicy Cinnamon Microwave Peanut Brittle

Thin and crisp peanut brittle with freshly ground cinnamon for spice is perfect for the holidays. I have been making this for over 10 years and this gets rave reviews. I add Hot Hungarian Paprika to add a nice heat component.

2 cup Salted Dry Roasted Peanuts
1 cup White Sugar
½ cup Light Corn Syrup
⅛ tsp Salt
1 tsp Butter
1 Tbsp Vanilla Extract
1 Tbsp Cinnamon, freshly ground
1 Tbsp Hot Hungarian Paprika, optional, adds nice and spicy heat component
1 tsp Baking Soda


- Place a silpat baking mat or buttered parchment paper on a cookie sheet and warm in 250 degree oven until peanut brittle is ready to spread.

Step 1: Combine peanuts, sugar, corn syrup and salt in a 2 quart microwave bowl. Microwave on high for 4 minutes.

Step 2: Stir well and microwave on high for 4 minutes more.

Step 3: Stir in butter, vanilla, cinnamon and paprika (optional) and microwave for 2 minutes.

Step 4: Stir in baking soda until light and foamy.

Pour onto cookie sheet and quickly spread thin.

Cool completely and break into pieces and serve.

Helpful Tips:

Tips: -Make sure that silpat & cookie sheet are warm before pouring on the peanut brittle to give yourself extra time to spread thin -To help with cleanup, soak bowls & utensils in hot water
