Crisp and crunchy peanut brittle--a holiday tradition.
Combine sugar, Karo syrup and water in heavy saucepan. Over medium high heat, bring mixture to boil and add butter.
Continue cooking to 280 degrees (use candy thermometer) stirring occasionally.
Add peanuts and stir constantly until thermometer reaches 308 degrees F, or hardcrack stage.
Remove from heat and add soda.
Pour onto no stick aluminum foil.
As candy begins to cool, pull from edges until evenly thin.
Notes:
You may substitute any kind of raw nut. You may also substitute flaked coconut, but it will need to be added at the end just prior to the soda.
