Mini cheesecakes just perfect for the Christmas season with colorful red and green cherries.
Preheat oven to 350 degrees. Line an 8 inch square baking pan with foil, leaving an overhang on all sides. In small bowl of electric mixer, place butter, brown sugar and flour. Mix at low speed until crumbs have formed. Set aside 1/3 cup crumb mixture. Press remainder into prepared pan and bake 10 minutes. In medium bowl, mix cream cheese, sugar, egg and lemon juice until smooth. Stir in cherries and pour over crust. Sprinkle with reserved crumbs. Bake 20 minutes or until filling still shakes slightly only in center then cool and chill. To serve, lift from pan using foil, and cut into 24 bars.
