Chocolate Topped Cheese Cake

A luscious vanilla cheesecake with a graham cracker crust and a creamy chocolate topping.
Ingredients
- Graham Cracker Crust:
- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 7 tbsp melted butter
- Cheese Cake:
- 3 packages cream cheese at room temperature
- 1 cup sugar
- 1 tsp vanilla extract
- 3 whole eggs
- Chocolate topping:
- 1/2 stick melted butter
- 2 oz semi sweet chocolate, broken
- 1/2 cup heavy cream
- 3/4 cup cocoa
- Pinch salt
- Dash vanilla extract

Method
Preheat oven to 350 degrees. Mix first 3 ingredients and pack in a springform pan. Cook 8 minutes and set aside to cool. Beat cream cheese until smooth. Add sugar and vanilla, then blend well. Add eggs and blend again, then place in pan. Bake for 45 minutes and let cool in fridge for 8 hours. Chocolate Topping: Melt butter in pan and add semisweet chocolate. Stir until melted, add heavy cream, sugar and cocoa. Cook 2 minutes, add a dash of vanilla, and remove from heat. Pour chocolate over cheese cake.
Notes: You can use any extract you like for different flavors. Also, don't forget fruit if you like. Simple and delicious every time.
