Chocolate and Salted-Caramel Cookies

A unique and delicious oatmeal cookie

  • Cook Time: 10 - 12 minutes


2 sticks Butter
2 cups Dark Brown Sugar
¼ cup Cocoa Powder
2 Eggs
1½ Tbsp Vanilla
2 Tbsp Milk
3½ cups Roughly Ground Cocoa Pebbles Cereal
2½ cups Oatmeal
1½ cups Flour
¼ cup Cocoa Powder
2½ oz Milk Chocolate, microplaned
1 oz Unsweetened Chocolate, microplaned
1 tsp Baking Soda
½ tsp Salt
48"dividual Rollo Candies
¼ cup Sea Salt


1.Preheat oven to 350º.

2. In your Kitchen Aid or a large mixing bowl, cream together the butter, dark brown sugar, and cocoa powder.

3. In a small bowl, whisk together the eggs, vanilla, and milk and then combine with ingredients in step 2. Mix together until smooth.

4. In another large mixing bowl, add the dry ingredients. Using a spatula, fold together until evenly distributed. Slowly add the dry ingredients to ingredients you combined in step 3. Mix until evenly combined.

5. Shape dough into balls—about 2 tablespoons each.

6. Push a Rollo candy into each dough ball.

7. Place Rollo-studded dough balls about 2 inches apart on Silpat- or parchment paper-lined cookie sheets.

8. Top each dough ball with a pinch of sea salt.

9. Bake at 350º for 10-12 minutes or until golden brown. Remove the cookie sheets from the oven and let stand for 2 minutes. Then place cookies on wire racks to cool.
