Chipotle Stuffed Pork Roast

A simple pork roast makes dinner extra special when stuffed chipotle peppers, dried cherries and mozzarella cheese.
Ingredients
- 2 shallots, minced
- 2 tbsp olive oil
- 2 1/2 cups fresh bread crumbs
- 1/2 cup chopped dried apricots
- 4 sweet cherry peppers, chopped
- 1/4 cup dried cherries, rehydrated by soaking in hot water at least 15 minutes
- 1/2 chipotle pepper, chopped finely
- 1 tbsp pomegranate molasses
- 1 tbsp lemon juice
- Salt and pepper to taste
- 3/4 cup shredded mozzarella cheese
- 3-4 lb boneless pork loin roast

Method
Preheat oven to 400 degrees. Saute shallots in olive oil over medium low heat until soft. Turn heat to lowest setting and add all ingredients except cheese and pork. Season with salt and pepper. Stir until all ingredients are evenly combined and sticky, but not wet, add water if necessary. Remove from heat and add cheese. Slice pork roast along center and lay roast flat. Spoon stuffing onto meat and roll pork closed. Tie with kitchen string to keep roast closed. Place in roasting pan, fat side up, with any extra stuffing and roast in oven, basting every half hour, until cooked through to 150 degrees.
