Red and green maraschino cherries make these simple cookies an extra special holiday treat.
Preheat oven to 350 degrees. Drain cherries and chop coarsely. Place on a paper towel to soak up excess liquid. In a large mixing bowl, beat sugar and shortening until creamy. Beat in extracts and egg. Add flour to creamed mixture slowly until well mixed. Stir in nuts and cherries. Drop by heaping tablespoons onto ungreased cookie sheets. Bake for 8 to 10 minutes. Cool 2 minutes on baking sheets then remove to wire racks to cool completely.
Notes:
This recipe is versatile. You can add chocolate chips, add different nuts, or leave out nuts all together for a completely different cookie.
