Maraschino cherries add a festive flare to these almond and coconut flavored gems.
In mixing bowl, cream shortening and sugars. Add eggs, one at a time, beating well after each one. Add extract and mix well. Combine flour, baking soda, and salt then add to cream mixture gradually. Stir in coconut and nuts. Drop by rounded teaspoonfuls 2 inches apart on a lightly greased baking sheet. Place halved cherry in center of each cookie. Bake at 350 degrees for 12-14 minutes or until lightly browned. Remove to cooling rack.
Notes:
You can substitute pecans for the almonds. Then it would be Cherry Pecan Chunky Chews. Preheat oven and lightly grease cookie sheets before you begin mixing your ingredients together.
