Cherry Date Nut Christmas Candy

A cooked mixture of sugar, milk, butter, dates, candied cherries and nuts is beaten with an electric mixer, rolled up, chilled, and sliced.
 

Ingredients

  • 3 cups sugar
  • 2 Tbsp butter
  • 1 1/2 cups milk
  • 1 cup dates, chopped
  • 1 cup EACH red and green candied cherries, chopped
  • 2 cups chopped pecans or walnuts

Method

Bring sugar, butter and milk to a boil, keep at a nice, overall gentle boil for 20 minutes, being careful not to over-stir. Add dates, cherries, and nuts and cook 5 more minutes. Beat with electric mixer until smooth and mixture begins to thicken (it will be creamy and will hold its shape). Roll up in a damp cloth and refrigerate. When cooled completely, unroll and slice.

 

Notes: Very festive looking with unique taste!
