Cherry Chocolate Mint Cookies

These colorful drop cookies are simple to make. They start with a cherry cake mix and add eggs, oil, nuts and chopped mint wafer candies.
 

Ingredients

  • 1 (18.25 oz.) pkg. cherry cake mix
  • 2 eggs
  • 1/2 cup oil
  • 1 cup chopped pecans
  • 1 cup coarsely chopped chocolate and green mint wafer candies (Andes)

Method

Heat oven to 350 degrees. Spray a large cookie sheet with non-stick cooking spray. Combine first three ingredients in a large mixing bowl. Stir in pecans and chopped candies. Drop by teaspoonfuls onto prepared cookie sheet. Bake for 10-12 minutes until edges are golden.

 

Notes: These quick and easy cookies are as good as they look. Perfect for Christmas get-togethers.
