Ingredients:
| 8-10 | Cannoli Shells, homemade or purchased |
| ½ cup | Crushed Peppermint Candies or Canes, divided |
| 2 oz | Semisweet or Bittersweet Chocolate, melted and cooled |
| 1 cup | (8 Oz.) Mascarpone Cheese |
| 2 Tbsp | Powdered Sugar |
| ¼ tsp | Peppermint Extract, or to taste |
| 2-3 drops | Red Food Coloring, optional |
Directions:
Set a rack over a large sheet of waxed paper or parchment paper. Reserve 2 Tbsp. of the crushed peppermint. Dip each end of the cannoli shells in melted chocolate, then dip in the remaining crushed peppermint candy. Place on rack. Allow chocolate to set before filling shells. In a small bowl, combine mascarpone, sugar, and peppermint extract. If desired, tint pink with food coloring, stirring to blend. Stir in the 2 tablespoons of reserved crushed peppermint. To serve, pipe or spoon filling into cannoli shells and serve. (If the mascarpone mixture is not used immediately, cover and refrigerate, then bring to room temperature about 30 minutes before filling cannoli shells.)

Leave a plate of these for Santa and he may leave you an extra gift! They are fast and easy to make, especially if you use prepared cannoli shells. The prepared filling may be keep for a few days in the refrigerator. Fill the shells just before serving.
