Beat butter and brown sugar together until creamy. Add flour, mixing until it forms a solid ball. Roll out on a floured board to 1/4-1/2 inch thickness. Cut out with Christmas cookie cutters. Place on ungreased baking sheets and bake at 325 degrees for 15-18 minutes. Once cooled, dip half of each cookie in melted chocolate chips. Decorate with Christmas sprinkles and sugar if desired.
