Bernie's Christmas Cake

The fruit in this recipe does take time (3-4 weeks) but once you take a bite you will realize it was worth the wait.
 

Ingredients

  • 4 sticks butter
  • 2 cups sugar
  • 6-8 eggs
  • 4 cups all purpose flour
  • 3 tsp baking powder
  • Dash of salt
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • Gravy browning
  • 2-3 cups of soaked fruit
  • Wine

Method

Pre-heat oven to 350 degrees. Grease two medium sized cake pans and set aside. Beat together butter and sugar until light and creamy. Add eggs beating until just incorporated. Add flour one cup at a time mixing after each addition. If batter becomes stiff, add a little wine to make mixing easier. Add the next 5 ingredients. mix well. Add gravy browning a little bit at a time until batter gets darker; to your liking. Add soaked fruit; mix well. Pour batter into pans and bake at 350 degrees for 1 1/2 to 2 hours or until pick inserted comes out clean. Cool. Remove from pan. Enjoy!!!

 

Notes: Fruit used in cake are: raisins, currants, prunes and cherries. A mixture of these fruits are soaked in wine for at least 3 -4 weeks.
