Apple Maple Mousse

Apples, pecans and maple syrup, with a creamy apple mousse--a perfect fall and holiday dessert.
 

Ingredients

  • 2 Granny Smith apples, cored and peeled
  • 1/4 cup maple syrup
  • 1 cup sugar
  • 1 1/2 cup water
  • 2 oz powdered gelatin
  • 1 cup heavy cream
  • 1/2 cup chopped and toasted pecans
  • 1 oz melted butter
  • 2 tablespoons brown sugar

Method

Mix butter, pecans and brown sugar in bowl. Press into four 3 inch molds. Slice apples into 1/4 inch rings, place in a small sauce pot with maple syrup, 1/2 cup sugar, and 1 cup water. Cook on low until apples become soft. Save 1 oz apples in pot and remove remaining apple slices. Puree apple slices and strain through a fine mesh strainer. Bloom gelatin in 1/2 cup water and add half to apple puree. Whip cream with remaining 1/2 cup sugar to soft peak then fold into puree. Pour mousse into round 3 inch molds and chill until set, about 30 minutes. Puree remaining apple with liquid and strain through strainer. Add remaining half of gelatin to puree and let sit. Once mousse is set, pour glaze on top. Chill until set again and then remove from molds and serve.
